A great treat for those endless school lunches. Pioneer Woman introduced this idea on the Food Network and I had to give it a try. It was an easy and very tasteful treat.
Ingredients:
4 cups of fresh or frozen peaches cut into large chunks
2 cans mandarin oranges (drained)
2 cans crushed pineapple (drained)
1 can fruit cocktail (drained)
6 medium firm (mostly green) bananas cut into chunks
1 small can of frozen pineapple-orange juice concentrate (thawed)
1/3 cup lemon juice
Directions:
Combine the peaches, oranges, pineapple, fruit cocktail, bananas, juice concentrate, and lemon juice in a bowl and mix until combined.
Place in small disposable plastic cups and cover with plastic wrap, foil, or lids. (I found my containers at Cash and Carry) Freeze until firm. Remove from the freezer 45 minutes to an hour before serving to thaw. (I put them in the kid’s lunch bag frozen and it is ready to eat by lunch time)
